1 tbsp coconut oil
1 medium onion, diced
2 garlic cloves, minced
1 tbsp fresh ginger, finely chopped
¼ fresh red chili pepper, finely chopped
1 tsp ground cumin
1 tsp ground coriander
½ tsp chili powder
½ tsp turmeric
2 tbsp tomato paste
1 can (14 oz) coconut milk
1 lb broccoli florets, cut small
1 can (14 oz) chickpeas
½ cup coconut cream
Fresh cilantro, chopped
Salt to taste
Directions:
1. Heat oil in a pan over medium heat. Sauté onion until translucent.
2. Add garlic, ginger, and chili; cook for 1 minute.
3. Add spices and tomato paste. Stir well.
4. Pour in coconut milk. Bring to a simmer.
5. Add broccoli and chickpeas. Simmer for 10 mins.
6. Stir in coconut cream and cilantro. Serve warm.
