Boursin Stuffed Mushrooms

These creamy Boursin stuffed mushrooms are packed with flavor, featuring garlic and herb cheese filling and a crispy parmesan panko topping. Perfect as a holiday appetizer or a side dish for a fancy steak dinner, they are an easy-to-make crowd-pleaser that’s always a hit at parties!

1 lb small cremini or button mushrooms
1 tbsp butter
½ small yellow onion, minced
Leaves from 1 small sprig thyme, chopped
Freshly cracked black pepper, to taste
1 (5.2 oz) garlic & herb Boursin cheese, room temperature
¼ cup panko crumbs
2 tbsp parmesan, finely grated
1 tbsp parsley, finely chopped
1 tbsp olive oil

Directions:
1. Preheat oven to 350°F.
2. Prepare filling by sautéing mushroom stems, onion, thyme in butter until golden.
3. Mix Boursin cheese with sautéed mixture; add half panko.
4. Coat mushroom caps with oil, stuff with filling, dip in remaining panko.
5. Bake 20 minutes or until cheese is gooey.
