Blueberry Yogurt Bread

Description

1 lb pasta (penne or rotini works well)
1 cup fresh cilantro, chopped
1 medium red bell pepper, diced
1 cup corn kernels (fresh, frozen, or canned)
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
1 avocado, diced
2 tbsp olive oil
2 tbsp lime juice
1 tsp lime zest
1 tsp garlic powder
½ tsp ground cumin
Salt and pepper to taste
Directions:
Cook the pasta according to the package instructions, then drain and rinse under cold water to cool it down.
In a large bowl, combine the cooked pasta, cilantro, red bell pepper, corn, cherry tomatoes, red onion, and avocado.
In a small bowl, whisk together olive oil, lime juice, lime zest, garlic powder, cumin, salt, and pepper.
Pour the dressing over the pasta mixture and toss gently to combine.
Chill the pasta salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Serve cold and enjoy!
