Blackened Shrimp Tacos with Slaw
Ingredients
For the Shrimp
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1/2 tsp cayenne pepper (optional)
1/2 tsp salt
1/4 tsp black pepper
For the Slaw
2 cups shredded cabbage
1/4 cup cilantro, chopped
1 tbsp lime juice
2 tbsp mayonnaise or Greek yogurt
Salt and pepper to taste
For the Cilantro Lime Sauce
1/4 cup mayonnaise or Greek yogurt
2 tbsp fresh lime juice
1 tbsp cilantro, chopped
1 small garlic clove, minced
Pinch of salt
For the Tacos
8 small flour or corn tortillas
Lime wedges, for serving
Fresh cilantro, for garnish
Directions
Prepare the Shrimp:
In a bowl, toss the shrimp with olive oil and spices until well coated.
Cook the Shrimp:
Heat a skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side until blackened and cooked through. Remove and set aside.
Make the Slaw:
In a mixing bowl, combine shredded cabbage, cilantro, lime juice, and mayonnaise. Toss to coat evenly. Season with salt and pepper to taste.
Prepare the Cilantro Lime Sauce:
In a small bowl, whisk together mayonnaise, lime juice, cilantro, minced garlic, and a pinch of salt until smooth.
Assemble the Tacos:
Warm the tortillas in a skillet or microwave. Fill each tortilla with a scoop of slaw, a few shrimp, and a drizzle of cilantro lime sauce.
Serve:
Garnish with fresh cilantro and serve with lime wedges on the side.
