• 1/2 tsp Garlic powder
• 6 Green onions
• 1/2 tsp Oregano, dried
• 1 Red bell pepper, diced small (about 3/4 – 1 cup), small
• 1 Zucchini, diced small (about 1 3/4 – 2 cups), medium
Baking & Spices
• 1 tsp Chili powder
Oils & Vinegars
• 1 Cooking spray
• 1/2 tsp Olive oil
Nuts & Seeds
• 1 tsp Cumin, ground
Bread & Baked Goods
• 8 (6-inch) corn tortillas, each cut into 6
Dairy
• 1 1/2 cups Mexican blend cheese
Prepared
• 2 cups Enchilada sauce, jarred or canned red
