Beef Lombardi Casserole

This zesty Southwestern-inspired beef and noodle bake is a nostalgic twist on a classic family favorite! Inspired by the comforting dishes my mom used to make, the Beef Lombardi Casserole brings back those cherished memories of coming home to the aroma of a bubbling, cheesy casserole. With tender noodles layered under a flavorful beef and tomato-chile sauce, and topped with gooey cheese, it’s the perfect cozy meal for chilly evenings. Enjoy it fresh from the oven or reheat the leftovers—it’s bound to become a family staple!

1 lb lean ground beef or turkey/chicken
1 (14.5 oz) can diced tomatoes
1 (10 oz) can diced tomatoes & green chiles
1 (6 oz) can tomato paste
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
12 oz egg noodles
1 cup sour cream or Greek yogurt
2 cups shredded cheddar cheese
1 cup grated parmesan cheese
1 cup shredded mozzarella cheese

Directions:
1. Preheat oven to 350°F. Grease a 9×13 dish.
2. Cook ground meat in a skillet until browned. Drain fat.
3. Add tomatoes, tomato paste, and spices. Simmer for 15-20 mins.
4. Cook noodles, drain, and mix with sour cream. Spread in dish.
5. Layer beef mixture and sprinkle cheeses. Bake for 20-25 mins.
6. Let stand for 5 mins before serving.
