Ingredients:
1 lb ground beef
1 medium onion, finely chopped
1 packet taco seasoning mix (or homemade)
1/2 cup water
1 can (10 oz) diced tomatoes with green chilies (or regular diced tomatoes)
1 cup cooked rice (optional, for extra filling)
2 cups shredded cheese (cheddar, mozzarella, or a mix)
1/2 cup sour cream (or more, for extra creaminess)
1/4 cup salsa (optional for added flavor)
4 large flour tortillas
1 tbsp olive oil (for sautéing)
Salt and pepper to taste
Instructions:
1. Prepare the beef filling:
Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
Add the ground beef to the pan, breaking it apart with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.
Drain any excess fat and return to the heat. Stir in the taco seasoning and water (as per the packet instructions). Let the mixture simmer for about 5 minutes until the sauce thickens and everything is well-coated.
2. Add tomatoes and flavor:
Stir in the can of diced tomatoes with green chilies (or regular diced tomatoes) and let the mixture simmer for another 5 minutes. Taste and adjust seasoning with salt, pepper, or additional salsa if desired.
Optional: Add in the cooked rice for a fuller burrito, and stir to combine.
3. Assemble the burritos:
Warm the flour tortillas in a skillet for about 30 seconds on each side, so they are pliable.
Lay each tortilla flat and spread a layer of sour cream and salsa (if using) in the center.
Add a generous scoop of the beef mixture, then top with a sprinkle of cheese.
4. Roll up the burritos:
Fold in the sides of the tortilla, then carefully roll it up, ensuring the filling stays secure inside.
Optional: For a crispy finish, you can lightly grill the rolled burritos in a skillet over medium heat until golden brown on each side.
5. Serve:
Slice the burritos in half and serve immediately with extra sour cream, guacamole, or salsa on the side.
