Beef and Broccoli Noodles

Description

1 1/2 cups orzo pasta
3 cups fresh spinach, chopped
1 cup crumbled feta cheese
1/4 cup olive oil
2 cloves garlic, minced
1/2 teaspoon lemon zest
1 tablespoon lemon juice
1/4 cup toasted pine nuts
Salt and black pepper, to taste
2 tablespoons fresh parsley, chopped (optional)
Directions
Cook the orzo pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and cook for 1 minute until fragrant.
Add chopped spinach to the skillet and cook for 2–3 minutes until wilted.
Stir in cooked orzo, lemon zest, and lemon juice, mixing until well combined.
Remove from heat and fold in crumbled feta cheese.
Season with salt and black pepper to taste.
Top with toasted pine nuts and fresh parsley before serving.
