Banana Split Layer Cake

This fun and fruity cake is inspired by the classic banana split, layering flavors of banana, strawberry, chocolate, and vanilla!

Ingredients:
Banana Cake Layers:

1 ½ cups sugar

¾ cup unsalted butter, room temperature

½ tsp vanilla extract

¾ cup sour cream

3 tbsp vegetable oil

3 large eggs + 1 large egg white

2 ½ cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

½ tsp salt

1 cup mashed bananas (2–3 bananas)

Frosting:

1 ½ cups salted butter

1 ½ cups shortening

12 cups powdered sugar

¼ cup water

1 tbsp vanilla extract

2 tbsp muddled strawberries

Pink icing color (optional)

2 tbsp cocoa powder

Sliced banana, chopped nuts (optional)

3–4 sliced strawberries

Yellow icing color (optional)

Chocolate Ganache:

3 oz semi-sweet chocolate chips

¼ cup heavy whipping cream

Pink Ganache:

9 oz pink candy melts

6–7 tbsp heavy whipping cream

Optional for Decoration:

Cherries

Sliced banana

Chopped nuts

Sprinkles

Instructions:
Prepare the Cake:
Preheat oven to 350°F (176°C) and grease three 8-inch round cake pans.
Beat butter and sugar until fluffy (about 3-4 minutes).
Add vanilla, sour cream, and oil, then mix until smooth.
Add eggs in two batches, mixing each time until fully combined.
In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add half to the batter.
Mix in mashed bananas, then add the remaining dry ingredients.
Divide the batter between pans and bake for 24-26 minutes, or until a toothpick comes out clean. Cool on a rack.

Make the Frosting:
Beat butter and shortening until smooth.
Add powdered sugar in batches, mixing until thick and smooth.
Set aside 1 cup of frosting each for chocolate and strawberry flavors.
To remaining frosting, add vanilla extract and mix until smooth.
For strawberry frosting, add muddled strawberries and a touch of pink color if desired.
For chocolate frosting, add cocoa powder and 1-2 tsp water to thin if needed.

Make the Ganache:
For chocolate ganache, heat chocolate chips and cream until melted and smooth.
For pink ganache, melt pink candy melts with heavy cream, adding until pourable.

Assemble the Cake:
Layer the cakes with alternating vanilla, strawberry, and chocolate frosting.
Drizzle chocolate and pink ganache over the top.
Decorate with sliced bananas, strawberries, cherries, and sprinkles as desired.
