Banana Chocolate Chip Baked Oatmeal

Ingredients

2 ripe bananas, mashed (+ slices for topping)
2 cups old-fashioned oats
1/2 cup walnuts, chopped (optional)
1/4 cup chocolate chips (+ extra for topping)
2 cups milk (dairy or non-dairy)
1/4 cup honey or maple syrup
1 large egg
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp baking powder
Pinch of salt
Directions

Preheat Oven:

Set your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
Mix the Ingredients:

In a large bowl, combine mashed bananas, milk, honey, egg, and vanilla extract. Mix well.
Add oats, cinnamon, baking powder, and salt to the wet mixture. Stir until combined.
Add Mix-Ins:

Fold in chocolate chips and chopped walnuts.
Assemble & Bake:

Pour the mixture into the prepared baking dish.
Top with banana slices, extra chocolate chips, and walnuts if desired.
Bake for 35–40 minutes or until set and lightly golden on top.
Cool & Serve:

Let cool for 5–10 minutes. Slice into squares and serve warm!
