Baked Halloumi with Chickpeas and Greens
Halloumi is a Mediterranean favorite, often enjoyed during warm summer days. This easy one-tray recipe brings together crispy, golden halloumi with tender chickpeas, vibrant kale, and juicy cherry tomatoes. It’s a versatile dish perfect for any occasion, topped with fresh pesto and served alongside crusty bread to soak up all the delicious flavors. A simple yet delightful vegetarian meal that is sure to impress!
2 x 400g tins chickpeas, drained and rinsed
400g cherry tomatoes
3 tbsp balsamic vinegar
2 tbsp olive oil
100g curly kale
225g lighter halloumi, sliced
130g fresh pesto
15g fresh basil leaves
Crusty bread, to serve (optional)
Directions:
1. Preheat oven to 220°C (fan 200°C, gas mark 7).
2. In a baking dish, combine chickpeas and tomatoes. Drizzle with balsamic vinegar and olive oil, then season. Roast for 10 minutes.
3. Add kale, toss gently, and top with halloumi slices.
4. Grill for 5-6 minutes until halloumi is golden.
5. Top with pesto, garnish with basil, and serve with crusty bread.
