Asparagus Stuffed Chicken Breast

Ingredients

4 boneless, skinless chicken breasts
12 asparagus spears, trimmed
4 slices mozzarella or provolone cheese
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
2 tbsp olive oil
1/4 cup grated Parmesan cheese
Fresh parsley (for garnish)
Directions

Prep the chicken: Preheat oven to 375°F (190°C). Cut a pocket into the side of each chicken breast, being careful not to cut through completely. Season both sides with garlic powder, paprika, salt, and pepper.
Stuff the chicken: Place 3 asparagus spears and 1 slice of cheese inside each pocket. Use toothpicks to secure the edges if needed.
Sear the chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for 2-3 minutes per side until golden.
Bake: Sprinkle Parmesan cheese over the chicken and transfer the skillet to the oven. Bake for 20-25 minutes, or until the chicken is cooked through (165°F internal temperature).
Serve: Remove toothpicks, garnish with fresh parsley, and serve hot with a side of roasted potatoes or salad.
