Recipes:

1 can (15 oz) chickpeas, drained and rinsed
1/2 cup crumbled feta cheese
1/3 cup dried cranberries
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup toasted almonds, sliced
For the Lemon Vinaigrette
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon honey
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
Salt and black pepper, to taste
Directions
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic powder, salt, and black pepper to make the vinaigrette.
In a large bowl, combine chickpeas, feta cheese, dried cranberries, red onion, parsley, and toasted almonds.
Drizzle the lemon vinaigrette over the salad and toss gently to combine.
Serve immediately or refrigerate for 15 minutes to let the flavors meld.
