Amish Apple Fritter Bread

Inspired by the classic apple fritter, this bread is filled with chunks of fresh apples and warm cinnamon spice, all topped with a sweet glaze. Perfect for cozy autumn mornings or as a thoughtful holiday gift, this easy quick bread brings the taste of apple fritters without the need for frying!

2 medium baking apples, peeled and chopped
½ cup light brown sugar
2 tsp ground cinnamon
1 tsp ground ginger
1 large egg
⅓ cup granulated sugar
¼ cup vegetable oil
¼ cup full-fat sour cream
2 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking soda
½ tsp kosher salt
Glaze: 1 cup powdered sugar, 1 tsp vanilla extract, 3 tbsp milk

Directions:
1. Preheat oven to 350°F. Prepare loaf pan with nonstick spray.
2. Mix apples, brown sugar, cinnamon, and ginger. Set aside.
3. Whisk wet ingredients, then add dry ingredients. Fold in apples.
4. Bake for 50-55 mins.
5. Cool and drizzle with glaze.
