2 medium baking apples, peeled & chopped
½ cup light brown sugar
2 tsp ground cinnamon
1 tsp ground ginger
1 large egg (room temp)
⅓ cup granulated sugar
¼ cup vegetable oil
¼ cup sour cream (room temp)
2 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking soda
½ tsp kosher salt
Glaze: 1 cup powdered sugar, 1 tsp vanilla, 3 tbsp milk
Directions:
1. Preheat oven to 350°F. Grease loaf pan.
2. Mix apples, brown sugar, cinnamon & ginger.
3. Whisk egg, sugar, oil, sour cream, & vanilla. Add flour, baking soda, salt.
4. Fold in ¾ apple mix, pour batter into pan. Top with apples.
5. Bake for 50-55 mins. Cool & glaze.
