Slow Cooker Coconut Chicken Curry is a comforting and creamy dish that brings the flavors of Indian cuisine to your home. 500g boneless chicken breast or thighs, cubed
2 tbsp vegetable oil
2 medium onions, finely chopped
1 tbsp garlic, minced
½ tbsp grated ginger
2 tbsp curry powder
¼ cup tomato paste
2 tsp Kashmiri red chili powder (or paprika)
400ml full-fat coconut milk
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Directions:
1. Heat oil in a pan, sauté onions until soft. Add garlic and ginger; cook for 1 minute.
2. Stir in curry powder and sauté briefly.
3. Transfer to a slow cooker. Add chicken, tomato paste, chili powder, coconut milk, and salt.
4. Cook on high for 3 hours or low for 5 hours. Garnish with coriander before serving.
