Banana-Pecan Caramel Delight Cake
Ingredients:
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup softened butter
1 1/2 cups sugar
3 large eggs
1 teaspoon vanilla extract
1 1/2 cups mashed bananas (about 3 bananas)
1 cup sour cream
1 cup chopped pecans
Frosting of choice (cream cheese, buttercream, chocolate ganache)
1/2 cup caramel sauce, plus more for drizzling
1 cup banana slices (for garnish)
Extra pecans (for garnish)
Instructions:
Set the oven to 350°F (175°C) and prepare four 7-inch cake pans by greasing and flouring them.
In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt.
Beat together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Add the mashed bananas and sour cream to the mixture and stir until well combined.
Gradually incorporate the dry ingredients, mixing just until combined. Fold in the chopped pecans.
Pour the batter evenly into the prepared cake pans and smooth the tops.
Bake for 25-30 minutes, or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool fully.
Once cooled, layer the cakes, adding frosting between each layer. Drizzle the top with caramel sauce.
Decorate with banana slices and extra pecans. Drizzle with more caramel sauce for added flavor.
