Salted Caramel Chocolate Cake
A Decadent and Moist Chocolate Cake with Rich Salted Caramel Layers
Ingredients:
For the cake:
2 cups all-purpose flour
1 3/4 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup boiling water
For the salted caramel filling:
1 cup granulated sugar
6 tablespoons unsalted butter, cubed
1/2 cup heavy cream
1 teaspoon sea salt
For the chocolate ganache:
1 cup heavy cream
8 oz semisweet chocolate, chopped
Directions:
1. Make the cake:
Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
In another bowl, whisk together the buttermilk, oil, eggs, and vanilla. Gradually add the wet ingredients to the dry ingredients, mixing until combined.
Stir in the boiling water until smooth (the batter will be thin).
Divide the batter evenly among the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
2. Prepare the salted caramel filling:
In a medium saucepan, melt the sugar over medium heat, stirring constantly until it turns amber. Add the butter and stir until melted.
Slowly pour in the heavy cream while stirring (it may bubble up). Remove from heat and stir in the sea salt. Let cool to room temperature.
3. Make the chocolate ganache:
Heat the heavy cream in a saucepan until it begins to simmer. Remove from heat and pour over the chopped chocolate. Let sit for 2-3 minutes, then stir until smooth. Let cool slightly.
4. Assemble the cake:
Place one cake layer on a serving plate. Spread a generous layer of salted caramel over the top. Repeat with the second cake layer.
Place the final cake layer on top and spread the chocolate ganache evenly over the entire cake.
Garnish with a sprinkle of sea salt if desired.
