Avocado & Tomato Grilled Cheese Sandwich

Avocado & Tomato Grilled Cheese Sandwich

Ingredients:

4 slices of whole-grain or sourdough bread

1 ripe avocado, sliced

1 large tomato, sliced

2 cups shredded cheddar cheese

1 cup fresh arugula (optional)

2 tbsp butter, softened

Salt and black pepper to taste

Instructions:

1. Prepare the Bread
Butter one side of each slice of bread. Place one slice butter-side down on a skillet.

2. Assemble the Sandwich
Layer the cheddar cheese, sliced avocado, tomato, and arugula (if using) on the bread. Sprinkle with a pinch of salt and black pepper. Top with another slice of bread, butter-side up.

3. Grill the Sandwich
Heat the skillet over medium heat. Cook the sandwich for 2-3 minutes per side, pressing lightly, until the bread is golden brown and the cheese is melted.

4. Serve & Enjoy
Slice in half and serve warm. This is a fresh, cheesy, and healthy twist on a classic grilled cheese!
