Cheesy Potato and Ground Beef Soup

Ingredients:

1 lb (450 g) ground beef

4 medium potatoes, peeled and diced

1 small onion, finely chopped

3 cloves garlic, minced

4 cups (1 liter) beef or vegetable broth

1 cup (240 ml) heavy cream

2 cups (200 g) shredded cheddar cheese

2 tablespoons butter

1 teaspoon paprika

Salt and black pepper to taste

Fresh parsley for garnish

Instructions:

1. Cook the Ground Beef:
In a large pot, melt butter over medium heat. Add the ground beef and cook until browned. Remove any excess grease.

2. Sauté Vegetables:
Add onion and garlic to the pot with the beef. Cook for 2-3 minutes until softened and fragrant.

3. Add Potatoes and Broth:
Stir in the diced potatoes, broth, paprika, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.

4. Add Cream and Cheese:
Stir in the heavy cream and shredded cheddar cheese. Mix well until the cheese is fully melted and the soup is creamy.

5. Serve:
Ladle the soup into bowls and garnish with fresh parsley. Serve warm with crusty bread or crackers.

Notes:
