Peach Muffins with Glaze

Ingredients:

For the Muffins:

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar

2 tsp baking powder

1/2 tsp salt

1/3 cup vegetable oil

2 large eggs

1/2 cup milk

1 tsp vanilla extract

1 1/2 cups diced fresh peaches

For the Glaze:

1 cup powdered sugar

2 tbsp milk

1/2 tsp vanilla extract

Instructions:

1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.

3. In another bowl, whisk oil, eggs, milk, and vanilla extract until smooth.

4. Gradually mix the wet ingredients into the dry ingredients until just combined.

5. Gently fold in the diced peaches.

6. Fill the muffin cups about 3/4 full with the batter.

7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool.

8. In a small bowl, whisk powdered sugar, milk, and vanilla extract to make the glaze.

9. Drizzle the glaze over the cooled muffins and top with extra peach pieces for decoration.
