Ingredients:

For the Cake Layers:

2 cups all-purpose flour

1 1/2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp nutmeg

1/2 cup sugar

1/2 cup brown sugar

1 cup vegetable oil

4 large eggs

2 cups grated carrots

1/2 cup crushed pineapple (optional)

1/2 cup chopped walnuts or pecans

For the Cream Cheese Frosting:

500g cream cheese, softened

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

For Decoration:

Edible flowers

Chopped nuts

Instructions:

Prepare the Cake Layers

Preheat the oven to 180°C (350°F). Grease and line three 8-inch cake pans.

In a bowl, sift together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl, whisk sugar, brown sugar, oil, and eggs until smooth.

Gradually mix in the dry ingredients. Fold in grated carrots, pineapple, and nuts.

Divide the batter evenly between the pans and bake for 25-30 minutes. Let cool completely.

Make the Frosting

Beat cream cheese and butter until smooth.

Gradually add powdered sugar and vanilla extract. Beat until fluffy.

Assemble the Cake

Place the first cake layer on a stand. Spread frosting evenly on top.

Repeat with the remaining layers, finishing with a generous layer of frosting.

Decorate

Garnish with edible flowers and chopped nuts for a stunning look.
