Creamy Pea and Egg Salad with Bacon
Ingredients:
2 cups cooked elbow macaroni
1 cup green peas (fresh or frozen)
3 hard-boiled eggs (chopped)
1/2 cup crispy bacon (crumbled)
1/2 cup mayonnaise
1/4 cup sour cream
1 tsp Dijon mustard
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 tbsp chopped fresh parsley
Instructions:
Cook macaroni according to package instructions, then drain and let cool. If using frozen peas, blanch them in boiling water for 2 minutes, then drain and cool. In a large bowl, mix mayonnaise, sour cream, Dijon mustard, salt, black pepper, and garlic powder. Add cooked macaroni, peas, chopped eggs, and crumbled bacon. Gently toss until well coated. Garnish with parsley and extra black pepper. Serve chilled.
