Creamy Chicken Potato Bake
Ingredients:
2 large potatoes, thinly sliced
2 chicken breasts, cut into bite-sized pieces
1 cup heavy cream
½ cup chicken broth
1 cup shredded mozzarella cheese
½ cup Parmesan cheese
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
1 tbsp butter
1 tbsp chopped parsley (for garnish)
Instructions:
Preheat oven to 375°F (190°C). Grease a baking dish with butter. Arrange half of the potato slices at the bottom. In a bowl, mix chicken, garlic, salt, black pepper, and Italian seasoning. Layer the chicken over the potatoes, then top with the remaining potato slices. Pour heavy cream and chicken broth evenly over the layers. Sprinkle mozzarella and Parmesan cheese on top. Cover with foil and bake for 35 minutes. Remove foil and bake for another 15 minutes until golden and bubbly. Garnish with chopped parsley and serve hot.
