Bacon-Stuffed Chicken Breasts

Ingredients:

3 large chicken breasts

1/2 cup cream cheese (softened)

1/4 cup shredded cheddar cheese

1 tbsp chopped parsley (plus extra for garnish)

6 strips cooked bacon (crumbled)

1 cup breadcrumbs

1/2 tsp paprika

1/2 tsp garlic powder

2 tbsp olive oil

Instructions:

1. Prepare the Chicken:

Preheat your oven to 200°C (400°F).

Butterfly the chicken breasts by slicing them in half lengthwise without cutting all the way through.

2. Make the Filling:

In a bowl, mix cream cheese, shredded cheddar, parsley, and half of the crumbled bacon.

3. Stuff the Chicken:

Fill each chicken breast with the cheese mixture and fold it closed. Secure with toothpicks if needed.

4. Coat the Chicken:

In a shallow dish, mix breadcrumbs, paprika, and garlic powder.

Brush the chicken breasts with olive oil and coat them evenly with the breadcrumb mixture.

5. Bake:

Place the stuffed chicken breasts on a greased baking tray.

Bake for 25-30 minutes, or until the chicken is cooked through and golden brown.

6. Garnish and Serve:

Top the baked chicken with the remaining crumbled bacon and fresh parsley.

Serve hot with your favorite side dish!
