Chocolate Berry Layer Cake Recipe
Ingredients:
For the Cake:
2 cups all-purpose flour
1 ½ cups granulated sugar
¾ cup cocoa powder
2 tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 large eggs
1 cup buttermilk
½ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
For the Berry Buttercream:
1 cup unsalted butter, softened
4 cups powdered sugar
½ cup fresh blackberries and blueberries, pureed
1 tsp vanilla extract
A pinch of salt
For Garnish:
Fresh blueberries
Fresh blackberries
Mint leaves

Instructions:
1. Prepare the Cake Layers:
Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add eggs, buttermilk, vegetable oil, and vanilla extract. Mix until combined.
Gradually add the boiling water, mixing until the batter is smooth. It will be thin, but that’s normal.
Divide the batter evenly among the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Allow the cakes to cool completely before removing from pans.
2. Make the Berry Buttercream:
In a stand mixer, beat softened butter until creamy.
Gradually add powdered sugar, one cup at a time, mixing well after each addition.
Add the berry puree, vanilla extract, and a pinch of salt. Mix until the frosting is smooth and fluffy.
3. Assemble the Cake:
Place one cake layer on a serving plate. Spread a thick layer of berry buttercream on top.
Add the second cake layer and repeat. Place the third layer on top and spread frosting evenly on the top surface.
Leave the sides bare for a semi-naked cake effect or frost them if desired.
4. Decorate:
Arrange fresh blueberries, blackberries, and mint leaves on top of the cake for an elegant finish.
5. Serve:
