Creamy Tomato Cod Stew
Ingredients:
For the Stew:
500g cod fillets, cut into chunks
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 can (400g) diced tomatoes
1 cup coconut milk or heavy cream
1 tsp smoked paprika
1 tsp dried thyme
1 tsp dried basil
Salt and pepper to taste
1/2 tsp red chili flakes (optional, for spice)
For Garnish:
Fresh parsley, chopped

Instructions:
1. Sauté the Aromatics:
Heat olive oil in a large skillet or pot over medium heat.
Add the chopped onion and sauté until translucent.
Stir in the minced garlic and cook for another minute.
2. Prepare the Base:
Add the diced tomatoes (with their juice) to the skillet.
Stir in smoked paprika, thyme, basil, and chili flakes (if using).
Season with salt and pepper to taste.
Let the mixture simmer for 5 minutes to blend the flavors.
3. Add the Creaminess:
Pour in the coconut milk or heavy cream and mix well.
Simmer for another 5 minutes until the stew thickens slightly.
4. Cook the Cod:
Gently place the cod chunks into the stew, making sure they are submerged.
Cover and cook for 7-10 minutes, or until the cod is tender and flakes easily with a fork.
5. Garnish and Serve:
Sprinkle freshly chopped parsley on top before serving.
Serve hot with crusty bread, rice, or steamed vegetables.
