Moist Chocolate Cake Recipe
Ingredients:
Cake:
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup cocoa powder
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
2 tsp vanilla extract
1 cup boiling water
Chocolate Frosting:
1 cup unsalted butter, softened
1/2 cup cocoa powder
4 cups powdered sugar
1/2 cup heavy cream
1 tsp vanilla extract
Steps:
1. Prepare the cake:
Preheat oven to 180°C (350°F) and grease two 9-inch round cake pans.
In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add buttermilk, oil, eggs, and vanilla, mixing until smooth.
Slowly stir in boiling water. The batter will be thin.
2. Bake the cake:
Divide the batter evenly between the pans.
Bake for 30-35 minutes or until a toothpick comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
3. Make the frosting:
Beat butter and cocoa powder together until smooth.
Gradually add powdered sugar and heavy cream, alternating, until fluffy.
Mix in vanilla extract.
4. Assemble the cake:
Spread a layer of frosting on one cake layer, then stack the second layer on top.
Frost the top and sides of the cake evenly.
5. Serve:
