Carrot Cheesecake Bars
Ingredients:

Crust:

2 cups graham cracker crumbs

1/2 cup unsalted butter (melted)

1/4 cup sugar

Carrot Layer:

1 1/2 cups grated carrots

1/4 cup brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1/4 cup water

Cheesecake Layer:

250g cream cheese (softened)

1/2 cup sugar

2 eggs

1 tsp vanilla extract

Topping:

1/4 cup crushed pecans

1 tbsp brown sugar

Instructions:

1. Preheat Oven: Set to 180°C (350°F) and line a baking pan with parchment paper.

2. Prepare Crust: Mix graham cracker crumbs, melted butter, and sugar. Press the mixture into the pan and bake for 8 minutes. Let cool.

3. Cook Carrot Layer: In a saucepan, combine grated carrots, brown sugar, cinnamon, nutmeg, and water. Cook on medium heat until the carrots soften and the liquid evaporates. Let cool slightly.

4. Make Cheesecake Layer: Beat cream cheese and sugar until smooth. Add eggs and vanilla, and mix until combined.

5. Assemble Bars: Spread the cooked carrot mixture over the crust, then pour the cheesecake batter on top.

6. Add Topping: Mix pecans and brown sugar, then sprinkle on top of the cheesecake layer.

7. Bake: Bake for 25-30 minutes or until the cheesecake sets. Let cool completely before cutting into bars.

8. Serve & Enjoy: Refrigerate for 2 hours before serving.
