Ham and Cheese Crepes Bake

Ingredients

For the Crepes:

1 cup (125g) all-purpose flour

2 large eggs

1 ½ cups (375ml) milk

2 tbsp (30g) melted butter

Pinch of salt

For the Filling:

2 cups (200g) shredded mozzarella cheese

1 cup (150g) diced cooked ham

½ cup (120ml) heavy cream

½ tsp black pepper

½ tsp garlic powder

For Topping:

1 cup (100g) shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions

1. Make the Crepes:

In a mixing bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth.

Heat a non-stick skillet over medium heat and lightly grease it with butter.

Pour ¼ cup of the batter into the skillet, swirling it to coat the bottom evenly. Cook for 1-2 minutes on each side until golden. Repeat with the remaining batter.

2. Prepare the Filling:

In a bowl, mix together the shredded mozzarella, diced ham, heavy cream, black pepper, and garlic powder until combined.

3. Assemble the Bake:

Preheat your oven to 180°C (350°F).

Lay each crepe flat, spoon the filling onto one side, and roll it up.

Place the filled crepes seam-side down in a greased baking dish.

4. Add Topping:

Sprinkle the remaining shredded mozzarella cheese over the crepes.

5. Bake:

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

6. Garnish and Serve:

Sprinkle with chopped parsley and serve warm.
