Halloumi & Butternut Squash Orzo Bake
This easy, hands-off recipe brings together the comforting flavors of butternut squash, halloumi, and orzo for a vegetarian midweek meal that requires minimal effort. Originating from a blend of Mediterranean influences, this bake is hearty, fresh, and packed with flavor thanks to garlic, paprika, and a touch of pesto. 1 red onion, cut into wedges
500g butternut squash, frozen or fresh
3 garlic cloves, crushed
2 tsp olive oil
1 tsp paprika
300g dry orzo
700 ml vegetable stock
250g cherry tomatoes
2 tbsp pesto
225g halloumi, cubed
Salt and pepper
Directions:
1. Preheat oven to 200°C. In a roasting dish, add onion, squash, and garlic. Drizzle with oil, paprika, salt, and pepper. Bake for 30 mins.
2. Add orzo, stock, tomatoes, and pesto. Mix well, add halloumi on top. Bake for 15-25 mins until golden.
