Garlic Shrimp Fried Rice
Ingredients:
2 cups cooked jasmine rice (preferably day-old)
1/2 lb shrimp, peeled and deveined
2 tablespoons vegetable oil
2 eggs, beaten
1/2 cup frozen peas
1/2 cup diced carrots
2 cloves garlic, minced
2 tablespoons soy sauce
1 teaspoon sesame oil
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 teaspoon red pepper flakes (optional)
2 green onions, chopped
1 teaspoon black sesame seeds (for garnish)
Instructions:
1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
2. In the same pan, add the remaining oil. Pour in the beaten eggs and scramble until just set. Push eggs to one side of the pan.
3. Add garlic, carrots, and peas. Stir-fry for 2 minutes until softened.
4. Increase heat to high and add cooked rice. Stir-fry for 3-4 minutes, breaking up clumps.
5. Pour in soy sauce, sesame oil, and red pepper flakes. Stir well to combine.
6. Return cooked shrimp to the pan and toss everything together. Cook for another minute.
7. Garnish with chopped green onions and black sesame seeds. Serve hot and enjoy!
