Chocolate Almond Truffles
Ingredients:
For the Filling:
200g (7 oz) cream cheese, softened
2 cups powdered sugar
1/2 cup almond butter or finely chopped almonds
1 tsp vanilla extract
For the Coating:
300g (10 oz) milk chocolate or dark chocolate, melted
1/2 cup chopped roasted almonds

Instructions:
1. Prepare the Filling: In a mixing bowl, combine the cream cheese, powdered sugar, almond butter, and vanilla extract. Mix until smooth and well-combined.
2. Shape the Truffles: Using a spoon or scoop, portion the mixture into small balls (about 1 tablespoon each). Place them on a baking sheet lined with parchment paper. Freeze for 30 minutes or until firm.
3. Coat the Truffles: Dip each frozen ball into the melted chocolate, ensuring it’s fully coated. Use a fork to lift it out, letting the excess chocolate drip off.
4. Decorate: Place the chocolate-covered truffles back onto the parchment paper. Sprinkle chopped roasted almonds on top while the chocolate is still wet.
5. Set and Serve: Allow the truffles to set at room temperature or refrigerate them for faster setting. Serve and enjoy!
