Pineapple Cheesecake
Ingredients:
For the crust:
1 ½ cups graham cracker crumbs
6 tbsp unsalted butter, melted
2 tbsp sugar
For the filling:
16 oz (450 g) cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream, cold
½ cup pineapple juice
For the topping:
1 cup fresh pineapple chunks (or canned, drained)
Instructions:
1. Prepare the crust:
Preheat your oven to 350°F (175°C).
Mix graham cracker crumbs, melted butter, and sugar in a bowl until combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8-10 minutes, then let it cool completely.
2. Prepare the filling:
In a large bowl, beat the cream cheese and powdered sugar until smooth.
Add the vanilla extract and pineapple juice, and mix until fully incorporated.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture.
3. Assemble the cheesecake:
Pour the filling over the cooled crust and spread evenly.
Cover and refrigerate for at least 4 hours or overnight to set.
4. Add the topping:
Before serving, arrange the pineapple chunks on top of the cheesecake.
5. Serve:
Slice and enjoy chilled!
