Smokey Halloumi Pasta Bake
Ingredients :
300 g (11 oz) dried pasta
2 tbsp olive oil, plus extra for greasing
2 cloves garlic, minced
1 medium onion, finely chopped
2 tsp smoked paprika, divided
250 g (8.8 oz) halloumi cheese, cubed
1 large courgette (zucchini), cubed
160 g (1⅓ cup) mature cheddar cheese, grated
800 g (28 oz) canned chopped tomatoes
Salt and black pepper, to taste
Directions:
Preheat oven to 200°C (180°C fan, 390°F). Grease a medium roasting pan (35×25 cm or 14×10″).
Cook the pasta in salted boiling water for 5 minutes, then drain (it will be slightly undercooked).
In a large frying pan, warm 2 tbsp of olive oil over medium heat. Add chopped onion, garlic, and 1 tsp smoked paprika, frying for 1 minute.
Increase the heat to high and add the cubed courgette and halloumi. Fry for 3-5 minutes until they start to color.
Add the chopped tomatoes and season with salt and pepper. Let the mixture bubble on high heat.
Stir in the pasta, then remove from heat. Transfer the mixture to the prepared roasting pan and level it out.
Top with grated cheddar cheese and sprinkle the remaining 1 tsp of smoked paprika over the top.
Bake in the oven for 10 minutes, or until the cheese is bubbly and golden.
