Fresh Herb Apple Broccoli Salad
Ingredients:
2 cups broccoli florets
1 Fuji apple, diced
1/4 cup chopped parsley
1/4 cup dried apricots, diced
1/4 cup toasted pine nuts
1/4 cup plain yogurt
1 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp honey
Salt to taste
Directions:
Toss broccoli, apple, parsley, apricots, and pine nuts in a bowl.
Combine yogurt, olive oil, vinegar, honey, and salt to make the dressing.
Mix the dressing with the salad. Refrigerate for 30 minutes before serving.
