Mozzarella-Stuffed Crispy Baked Onion Rings
Add a zesty kick to your baked onion rings with a hint of lemon and cheesy indulgence.
Ingredients:
2 large onions
8 oz mozzarella cheese slices
1 cup all-purpose flour
2 large eggs (beaten with 1 tbsp lemon juice)
1 1/2 cups panko breadcrumbs
Zest of 1 lemon
Salt to taste
Instructions:
Preheat oven to 400°F (200°C). Prepare a baking sheet with parchment.
Stuff onion rings with mozzarella slices.
Coat in flour, eggs mixed with lemon juice, and breadcrumbs mixed with lemon zest.
Bake for 20-25 minutes. Serve with a lemony aioli.
