Halloumi Pasta
Halloumi Pasta is the ultimate weeknight dinner—fast, easy, and bursting with flavor! Originating from Sarah Rossi’s kitchen at TamingTwins, this recipe combines the squeaky goodness of halloumi with the freshness of a tomato-based sauce, giving you a rich yet simple meal ready in just 15 minutes. The contrast of crispy halloumi chunks with tender spaghetti and veggies will leave everyone asking for seconds!
2 tbsp Olive oil
450g Halloumi, cut into chunks
300g Pasta (your choice)
1 Onion, finely chopped
3 Garlic cloves, crushed
300g Broccoli, florets
250g Cherry tomatoes, halved
2 tsp Sweet smoked paprika
500g Passata
Sea salt & freshly ground black pepper
Directions:
1. Fry halloumi cubes in 1 tbsp olive oil until golden. Set aside.
2. Add the remaining oil, onions, and garlic. Sauté until softened.
3. Cook pasta and add broccoli for the last 5 minutes.
4. Add tomatoes, paprika, passata, salt & pepper to the onion mix. Cook for 5 minutes.
5. Drain pasta, add to the sauce, mix in the halloumi, and serve.
