1 lb butternut squash, peeled & cubed
1 tbsp olive oil
12 oz green beans, trimmed
1 cup pecans
½ cup dried cranberries
2 tbsp maple syrup
2 tbsp lemon juice
Directions:
1. Roast squash at 400°F for 20-25 mins.
2. Boil green beans for 3-5 mins, rinse in cold water.
3. Toast pecans at 350°F for 5 mins.
4. Combine all ingredients, drizzle with maple-lemon mix.
