8 oz rice noodles or linguine
1/2 cup creamy peanut butter
1/3 cup tamari or soy sauce
2 tbsp honey
1/4 cup Thai red curry paste
1 tbsp fresh ginger, grated
2 carrots, shredded
2 bell peppers, thinly sliced
1/4 cup + 1 tbsp sesame oil
8 oz halloumi, cubed
6 garlic cloves, chopped
1/2 cup fresh basil, chopped
1/2 cup fresh cilantro, chopped
2 green onions, thinly sliced
3 tbsp sesame seeds
3 tbsp chopped peanuts
2 tbsp lime juice
Directions:
1. Cook noodles as per package instructions, drain, and add to a bowl with carrots and peppers.
2. Combine peanut butter, soy sauce, honey, curry paste, ginger, and 1/3 cup water. Mix into the noodles.
3. Fry halloumi in 1 tbsp sesame oil until crispy. Remove.
4. Add remaining sesame oil, garlic, and chili flakes to the skillet until garlic crisps.
5. Toss halloumi with garlic oil, herbs, peanuts, and sesame seeds. Add lime juice.
6. Serve noodles topped with halloumi and chili oil.
