Sweet Potato & Chickpea Curry

2 large sweet potatoes, peeled & cubed
1 can (15 oz) chickpeas, drained & rinsed
1 onion, finely chopped
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 can (14 oz) coconut milk
2 tbsp curry powder
1 tsp turmeric
1 tsp cumin
Salt & pepper, to taste
2 tbsp vegetable oil
Fresh cilantro for garnish
Directions:
1. Heat oil in a pot, sauté onion until translucent.
2. Add garlic & ginger, cook for 1 minute.
3. Stir in spices & toast for 30 seconds.
4. Add sweet potatoes, chickpeas, & coconut milk. Simmer for 20 mins.
5. Season & garnish with cilantro.
