Cranberry Balsamic Roast Beef

1 tbsp olive oil
2-3 lb beef roast (chuck, round, brisket, etc.)
1 large onion, sliced
2 tbsp tomato paste
4 cloves garlic, chopped
1 tsp thyme, chopped
1 tsp rosemary, chopped
1/2 tsp red pepper flakes (optional)
2 cups beef broth
1/4 cup balsamic vinegar
1/2 cup cranberry sauce
2 tbsp soy sauce
4 tbsp maple syrup
1 tbsp Worcestershire sauce
1 cup cranberries
1 lb carrots, sliced
2 tbsp cornstarch + 2 tbsp water (optional)
Directions:
1. Heat oil in a large oven-safe pan. Brown beef on all sides, set aside.
2. Cook onion until tender. Add tomato paste, garlic, thyme, rosemary, red pepper flakes, cook for 1 minute.
3. Add broth, vinegar, cranberry sauce, soy sauce, maple syrup, Worcestershire sauce, cranberries, carrots, and beef.
4. Braise at 275°F (140°C) in the oven for 3-4 hours or use a slow cooker on LOW for 8-10 hours.
5. Shred beef and thicken sauce if desired.
