This delightful Salted Almond Brittle recipe offers a unique twist on the traditional caramelized candy, inspired by the flavors of Mexico. Unlike the usual nut brittle, this version features a touch of honey and vanilla, giving it a distinctively aromatic flavor. Passed down to me through a video call from a Mexican family, this recipe—also known as “Palanquetas de Cacahuate”—is usually made with peanuts but works wonderfully with almonds. Perfect for a nostalgic, sweet crunch that brings back fond memories.

2 cups roasted almonds
2 cups sugar
1 cup honey
Pinch of salt
1 tsp vanilla extract

Directions:
1. Line a baking sheet with parchment paper.
2. Roast almonds lightly, then set aside.
3. Melt sugar over medium heat, stirring continuously.
4. When sugar looks like honey, add honey and stir.
5. Add vanilla and almonds, mix well.
6. Pour onto baking sheet, sprinkle salt, and let cool.
7. Break into pieces once hardened.
