This easy Halloumi & Butternut Squash Orzo Bake is the perfect vegetarian comfort food for a cozy night in. Combining hearty butternut squash, fresh cherry tomatoes, and squeaky halloumi cheese, this dish is full of flavor and satisfying textures. 1 red onion, cut into wedges
500g butternut squash, cubed
3 garlic cloves, crushed
2 tsp olive oil
1 tsp paprika
300g dry orzo
700ml vegetable stock
250g cherry tomatoes
2 tbsp pesto
225g halloumi, cubed
Salt & pepper

Directions:
1. Preheat oven to 200°C.
2. Roast onion, squash, garlic, oil, paprika, salt & pepper for 30 min.
3. Add orzo, stock, tomatoes, pesto, top with halloumi, bake 15-25 min.
