Smokey Halloumi Pasta Bake

This delicious Smokey Halloumi Pasta Bake combines the firm texture of halloumi with the gooeyness of mature cheddar, all wrapped up in a comforting smoked paprika tomato sauce. Inspired by Mediterranean flavors, this vegetarian dish is perfect for a hearty family dinner. Easy to prepare and ready in just 30 minutes, it’s a great way to put veggies on the plate while enjoying a warm, cheesy bake!

300g dried pasta
2 tbsp olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 tsp smoked paprika
250g halloumi cheese, cubed
1 large courgette, cubed
160g mature cheddar, grated
800g canned chopped tomatoes
Salt & black pepper

Directions:
1. Preheat oven to 200°C (390°F).
2. Cook pasta for 5 mins, drain.
3. Fry onion, garlic & paprika in oil for 1 min.
4. Add courgette & halloumi, fry for 3-5 mins.
5. Stir in tomatoes, add pasta, mix well.
6. Place in baking dish, top with cheese & paprika.
7. Bake for 10 mins.
