2 large boneless, skinless chicken breasts
½ cup cream cheese, softened
¼ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
½ cup chopped spinach (fresh or frozen, thawed and drained)
¼ cup chopped artichoke hearts
1 clove garlic, minced
½ tsp onion powder
½ tsp paprika
½ tsp salt
¼ tsp black pepper
1 tbsp olive oil
Directions:
Preheat your oven to 375°F (190°C).
In a bowl, mix together cream cheese, Parmesan, mozzarella, spinach, artichokes, garlic, onion powder, salt, and black pepper until well combined.
Cut a pocket into each chicken breast without slicing all the way through.
Stuff each chicken breast with the creamy spinach and artichoke mixture, securing with toothpicks if needed.
Rub the chicken with olive oil and sprinkle with paprika for color.
Heat a skillet over medium-high heat and sear the chicken for 2 minutes per side until golden brown.
Transfer to a baking dish and bake for 20-25 minutes or until the chicken is fully cooked (internal temperature of 165°F or 75°C).
