Recipes:

3 large carrots, peeled and chopped
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup pistachios, roughly chopped
2 tablespoons olive oil
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
Salt and black pepper, to taste
2 cups mixed greens or arugula
1/4 cup crumbled feta cheese (optional)
Honey Lemon Dressing:
2 tablespoons olive oil
1 tablespoon honey
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
Salt and black pepper, to taste
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, toss the chopped carrots and chickpeas with olive oil, cumin, smoked paprika, salt, and black pepper. Spread them out evenly on the baking sheet.
Roast for 20-25 minutes, flipping halfway through, until the carrots are tender and slightly caramelized.
Meanwhile, prepare the dressing by whisking together olive oil, honey, lemon juice, Dijon mustard, garlic powder, salt, and pepper in a small bowl.
In a serving bowl, combine the roasted carrots and chickpeas with mixed greens and chopped pistachios. Drizzle the dressing over the salad and toss gently to
coat.
Garnish with crumbled feta cheese, if using. Serve immediately.
