1 cup orzo pasta
1 cup fresh cranberries (or dried cranberries if preferred)
½ cup crumbled feta cheese
1 cup baby spinach, chopped
¼ cup walnuts, chopped
1 tbsp olive oil
1 tbsp orange juice
1 tbsp lemon juice
1 tsp honey
Salt and black pepper to taste
Directions:
Cook the orzo pasta according to package instructions, drain, and set aside to cool.
In a small bowl, whisk together olive oil, orange juice, lemon juice, honey, salt, and black pepper to create the citrus dressing.
In a large mixing bowl, combine the cooled orzo, cranberries, crumbled feta, spinach, and walnuts.
Pour the citrus dressing over the salad and toss gently to combine.
