Recipes:

2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3/4 cup warm water
2 tablespoons olive oil
1/2 cup dried cranberries
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1/2 teaspoon garlic powder
4 oz goat cheese, crumbled
1 tablespoon honey (optional for drizzling)
Directions:
In a large bowl, whisk together the flour, salt, and baking powder. Add the warm water and olive oil, stirring until a dough forms.
Fold in the dried cranberries, rosemary, thyme, and garlic powder. Mix until evenly distributed. Cover the bowl and let the dough rest for 30 minutes.
Preheat a large skillet or griddle over medium heat. Divide the dough into 2-3 portions and roll each portion into a thin, oval shape.
Cook each flatbread for about 2-3 minutes per side, or until golden brown and slightly puffed.
Remove from the heat and immediately sprinkle with crumbled goat cheese. Let the residual heat soften the cheese slightly.
Drizzle with honey if desired and serve warm.
