Recipes:

1 cup orzo pasta
2 cups fresh spinach, chopped
1/2 cup Kalamata olives, sliced
1/2 cup cherry tomatoes, halved
1/2 cup crumbled feta cheese
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and black pepper, to taste
Directions
Cook orzo according to package instructions until al dente. Drain and rinse under cold water.
In a large bowl, combine cooked orzo, spinach, olives, cherry tomatoes, feta cheese, red onion, and parsley.
In a small bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and black pepper.
Drizzle dressing over the orzo mixture and toss gently to combine.
Serve immediately or refrigerate for 15 minutes to allow flavors to meld.
